Tea time recipe: Lemon cookies with rosemary

 

There’s nothing better than the smell of fresh-baked cookies meeting you when you step through the front door. One of our favourite recipes for tea time? Lemon cookies with dried rosemary!

 

Recipe lemon cookies with rosemary

 

What you need

220gr almond flour • 30g cane sugar • 2 tsp dried rosemary • pinch of sea salt • zest of 1 lemon • 1 tsp of baking powder • 120 ml lemon juice

 

Recipe

  1. Preheat the oven to 160°C.
  2. Add the almond flour, cane sugar, sea salt, lemon zest, rosemary and baking powder to a mixing bowl and stir while slowly adding in the lemon juice.
  3. Knead the mixture until a dough forms.
  4. Roll small balls from the dough and divide them on a baking tray covered with baking paper. Press down lightly. If you wish you can make shapes from the dough.
  5. Bake for 15 minutes in the preheated oven.
